Raspberry Cornbread

Hi guys!

One more for Dana!

This one's as easy as you want to make it.

You can be lazy like me and use Jiffy corn muffin mix  ,,, or you can use your own corn bread recipe.

Follow the recipe on the box or your recipe, then add:

quick, simple

Frozen smashed raspberries,,, 1/2 cup should be plenty.

From that small can of diced chilies
I put in 2 heaping Tablespoons. 

I used most of the can.  You can use them
all if you use a bigger recipe.

I added maybe an ounce of shredded monterey jack cheese.
Usually this little box mix makes 6 muffins.  Can you
see the water in my empty tins?  It's good to put it in there while baking.  Keeps your metal from warping.






This is where the "diet" comes in ,,, yep! 
Just squirt a little honey on there and munch!!!

These are SO GOOD!!!

These went really well with the rest of my lunch....

Chicken Tortilla Soup with monterey jack cheese,
sour cream and avocado!!!

I am a baker at heart, but I love to cook too.  As fall and our normal wet weather gets here, I'm happy to be back in my kitchen making soups and stews to fill the freezer.  To me there's nothing better than working outside in our nasty weather and being able to come inside for a bowl of hot soup and a roll or muffin.

Raspberry Turnover Recipe For Dana

Hi guys!

How are ya???  Around here,,, all is well.  YAY!!!

The weather can't make up it's mind.  One minute it's raining, the next it's trying to sunshine.  An hour later it's warm and not a cloud in the sky.  HUM!  Around here that's called normal!

So the other day I showed a picture of some turnovers I took to the recycle guys.  AND!!!  Dana was asking for a recipe.  Sorry Dana!  There isn't one.  :)  NO!  REALLY!

So, here's a look at what I did and we'll pretend like this is recipe.  I hope that works for you sweetie! 


I started with a hand full of raspberries from
the freezer and 4 squares of puff pastry.

The puff pastry comes from Cash n Carry (restaurant supplier) on Cedar and Hewitt here in Everett.  It's inside the walk-in deep freezer and it comes in a giant box.  I think there's 10 layers of 12 squares of puff pastry.  It's made in Oregon by Orange Bakery, Inc.  This stuff is amazing!  This is used by bakeries.  Real ones!  :)

I usually let the pastries sit on the cookie sheet to thaw out.  It doesn't take too long. 

I used about one cup of frozen berries and 4 squares of
frozen puff pastry.  You could use more berries than that.

I put the frozen berries in a baggie ...

and smashed them into many pieces. They will
fit inside the pastry much easier this way.

I put those in a bowl so I could see how much I have. 

I divided the amount in the bowl between all 4 pastries.

I wet the edges of the pastry with water.  This way they
will stick together while they bake.

Fold the dough over, crimp edges with fork.
Cut a couple vent holes in the pastry.

BEFORE:  Ready to bake at 350* for 25 to 35 minutes. 

AFTER:  Otherwise known as golden brown.

These could have baked a few more minutes. 
BUT!  Close enough!


As soon as these come out of the oven I place them on a clip board (where the clip is removed) covered with aluminum foil.  Then add a "chunk" of frosting.  I let this sit several seconds. It will melt.

Help it by spreading it out a little and then let it run.




I used frozen puff pastry.  Let it thaw just a bit.  I like to stretch the middles of the squares a little.  It makes a little bigger pocket in the middle to hold the fruit easier.  As these cook, the fruit will shrink. 

Add your fruit to the middle of the pastry.  Wet the edges for stick power!  Crimp the edge of the pastries.  Cut at least one vent hole.  You can use egg white to wet the edges and brush on top of the pastries to make them even prettier.  BUT!  I can't see "wasting" an egg when I'm going to cover this with frosting.

Bake about 350* for 25 to 35 minutes or golden brown.

I use the frosting as the sugar for these tart berries.  When you bite into this you get 3 tastes in your mouth. 

Tart - berries. 
Sweet - frosting. 
Salt - puff pastry. 

Mix all 3 together and your mouth is in Heaven!!!

Sometimes I put a little cinnamon in the frosting or in with the fruit.  It's easier to gauge how much to use when you put it in the frosting.

I hope this helps.  There's really no way to screw these up.  Any thing works.  I usually make these with apples.  I put a big scoop of home made apple butter in the middle, spread it out and top with granny smith apples.  Again - sweet, tart and salty!  YUM!  I've added raisins, cream cheese, cheddar cheese, cranberries and oh yeah,,,, chocolate!  That was fun.  Raspberries, cream cheese (slightly sweetened) and chocolate chips.  O. M. G.   That one got rave reviews.

Give any thing a try.  Oh ,,,,, wait ,,,  I tried this once with a little gravy, roast, sweet potatoes and peas.  It was so salty I could hardly eat it.  I don't think I even finished half of one!

Look At This Load and the Turnovers!!!

Hi guys!

Okay???  So, where have I been???

I'm not sure!  Some times I just kind of lose track of time and what I'm doing!  Lately, I think I've been wondering around in a funk.  The gorgeous weather we've had all summer is leaving.  DANG MAN!!!  Not that I like the hot weather,,,, just that I don't like the gloomy stuff already!  I know, I know!  We've only had a couple days of it and I'm already whining.  I just like the sunshine.  It doesn't have to be hot,,, just sunny!

Joy and I have been out looking for cans.  I've known for a while some one else has been out picking them up too.   But, the other day I found out there might be as many as 7 others picking them up where I usually do.  DANG!  Not a good thing.  There's more than enough for 2 or even 3 people,,,, after that,,, EEK!  Not so much!

Here's a picture of my truck on it's way to the recycle center after 3 weeks of picking up cans.

This turned out to be $57 in cans.

This was a good day!!!  Tons of food and cans.  Money too!  hahaha!!!  Okay, not tons of money, but more than I had when I went in there.

This summer I noticed I had more bees than I can remember seeing in many, many years!  They were polite for the most part.  They didn't bother me.  They just hung out in the few raspberry bushes I have.  Many years ago I bought 1 or 2 starts of an ever bearing berry.  I get 2 crops of berries each year.  This year they were ready to start eating by the first of June.  Way before the strawberries were ready.  That's a first!  Now, the second crop has been ready for the past 2 months.  Usually they are ready right about now.  The first bunch is sweet and juicy.  The 2nd batch is larger, drier, but just as tasty!  YUM!  Joy and I go out nearly every day with a cereal bowl and fill it 1/2 to completely full with ripe berries.  I set the bowl in the freezer and the next day put those berries in a freezer bag, then I go do it all over again.  This way the berries stay loose from each other.  We fill a minimum of 3 sandwich sized freezer bags a week.  YUM!  I do love me some raspberries.  The other day I put them in my cornbread along with some green chilies... O. M. G. were they good.  Then I just added honey after they baked.  Diet muffins???  No butter!  LOL!

OKAY!  Enough rambling.  YEP!  I get this way when I'm tired.

Hubcap Clocks

Hi guys!

Well,,, how are ya today???  I hope all is well in your little corner of the world.  It's going pretty good around here!!!

I love building clocks.  I don't know why, but I have this "thing" for clocks.  EEK!  What can I say.  They just trip my trigger!

SO, I took some junk and made a couple.  Here they are....

This is from a Volkswagen Bus.

Add a few peace sign beads and a clock movement and voila!

Here's a Chevy hubcap and a few license plate numbers.

I love simple, easy to make, but fun and different "things".  Now, I wouldn't really call this art.  It's just some "crap" thrown together and I LOVE it!  What I really like is I can use this.  Anyone can use this.  It's not just for the man of the house or the garage.  It's for FUN!!!

Brass Slot Machine Coins Great for Jewelry

Look what I found this weekend!!!

Slot machine coins/tokens!  YAY!!!

I love finds like this. 
There's so many different ways to use these.

Some have letters, some numbers, some great graphics.

About the size of a quarter ,,, I'm thinking bracelets first.

I picked these up at the recycle center just down the road.  According to the price I paid (OUCH!) they are brass.

I was lucky enough to find a small can full of these,,, so I put some on Etsy.com for sale.  You get 10 of them for only $5.00.  OH!  You want how many???  LOL!  Most of these are silver in color.  I'm going to try changing those colors during the next couple weeks.  Why?  Because I can???  I just want to see what happens.

A Fun and Funky Find!

Around here things are just right. The other day I found a funky light. I’m not sure what to do with it yet ,,, but, I just had to bring it home! I haven’t even plugged it in yet to see if it works. Soon!

One of My Greatest Finds!!!

I have to tell you about a wonderful day I had just this past Saturday!

You know how some days every single thing goes right???  I hope you do!  LOL!  I do!  I love it when you get up a little sleepy, maybe a little dreamy yet and you have that first latte or cup of coffee,,,, okay!  Or what ever.  In my case, since I retired I've gotten into a habit of sitting down with a book and a latte first thing every morning.  That means sitting on the love seat with a cat on my lap, a dog next to me with another cat nursing and cuddling up to Joy.  I love mornings like this.

So, on this wonderful day I finished my latte, took Joy out for a walk and came back to load up our cans into the truck.  I had made a big batch of cookies the day before, so I loaded those up too.  I took a shower and just had one of those days where every thing felt so good.  Just right.  I went into the recycle center and I had just pulled up when one of the guys was walking by.  So?  I love doing this,,, I yelled,,, hey little boy want some cookies?  He just laughed and I was proposed too ,,, AGAIN!  Food!  Men!  I've had at least 500 marriage proposals over the years.  That's what happens when you work with all men and you love to bake.

WELL!  I got out of the truck and one of the other guys started unloading my truck for me.  They rarely do this.  SO!  I smiled and offered him cookies too.  He just laughed and said he already saw the plate full.  Too fun.  So, we finished and I turned around only to see another guy, grandpa, walking towards me with this in his hands.


This is an AMAZING find!  This is a vintage Keystone Power Shovel.  It's very collectible and, if I've done my homework right, in mint shape this little puppy could run around $500 plus!

WELL!  Mine (thank you grandpa) is no where near mint condition,,, but!  It's still very collectible.  The only real thing wrong with it is the paint and the cord that pulls the bucket up.  The handle is slightly bent and there's one little ding on the front by the top left corner where the "window" is.

Usually I would take a piece like this and mess it up, add some sedums and call it fun.  NOT this time!  I hope to have this on eBay by Monday evening.  This is some thing some one would really like and I'm so happy this one was rescued before it was melted down to make some thing else with.  If you think about where it could have gone ,,, this could have come back in it's new life as a piece of rebar or some thing just as sad.

After I left the recycle center I stopped at a large grocery store and picked up 3 drink items they gave me free coupons for.  I also stopped by Starbucks and they gave me 2 "stars" for my drink instead of the normal one. 

I'm on a roll now kids!!!

Then, as I'm putting my drinks in my truck a friend pulls into the parking lot.  How crazy is this???  I have some thing for her in my truck and she doesn't know it.  I give it to her AND she has some thing for me in her truck and I didn't know it.

OH MAN!  It's a very tall cabinet (think screw holder like you'd find in a garage) and it's FULL of buttons.   EEK!  YAY Shannon!

So, I left there and took the free drinks back to the guys at the recycle center.  Then I went to see Beth at We Do Art and share the buttons and some cookies.  ALRIGHT!  Most of the buttons.  tee hee hee!!!  The funny thing is I already had a big can of buttons for Beth in my truck.  SO!  We shared what we didn't want with one of the girls that works at the White Buffalo.  

Then I took off for home and made it through the door just as bull riding started on tv.  YAY!!!

What a great day!!!

I just love a day that gets better and better and is full of fun, wonderful people and surprises!  Don't you???
